Crepes Tearing

Your crepes tear because the batter is too thin or the pan is too dry. Add flour and more fat to strengthen them.

  • crepe batter
  • flour
  • butter
  • milk
  • nonstick pan

Why it happened

Thin batter lacks structure and tears when lifted. A short rest and extra flour create a stronger starch network.

The fix

Save
  1. 1 whisk in 1 tablespoon flour to thicken the batter
  2. 2 rest the batter 10 minutes so the flour hydrates
  3. 3 grease the pan lightly with butter before each crepe

If it's still wrong

  • stack and serve the smaller pieces with syrup
  • use as crepe strips for a salad topping

Prevent next time

  • measure liquid carefully and avoid over-thinning
  • use a nonstick pan and a thin spatula
