Poached Eggs Spreading

Ingredients on hand

  • eggs
  • fine-mesh strainer
  • vinegar
  • slotted spoon
  • water

Why it happened

Older eggs have thinner whites that spread quickly. Acid helps the proteins coagulate faster, and gentle swirling gathers the whites around the yolk.

The fix

Save
  1. 1 crack the egg into a fine-mesh strainer to drain the watery whites
  2. 2 add 1 teaspoon vinegar to gently simmering water and create a slow swirl
  3. 3 slide the egg in and nudge the whites toward the yolk with a spoon for 30 seconds

If it's still wrong

  • Serve on toast with sauce or salsa to hide ragged edges.
  • Use the poached eggs in a bowl where shape is less critical.

Prevent next time

  • Use the freshest eggs possible.
  • Keep the water at a bare simmer, not a rolling boil.

Why this works

Egg whites coagulate faster in slightly acidic water. Straining removes the thin, watery portion that would otherwise drift away, leaving a tighter mass that hugs the yolk.
