Why it happened

Capsaicin dissolves in fat and is diluted by volume. Starch spreads the heat across more food.

The fix

  1. 1 stir in 1/2 cup cooked rice or potatoes to dilute
  2. 2 add 2 tablespoons cream to bind the heat
  3. 3 add a pinch of sugar and lime to balance
