Alfredo Too Thick

Your Alfredo sauce is gluey because it reduced too far or the cheese over-set. Loosen it with warm liquid.

  • thick alfredo sauce
  • warm milk
  • butter
  • pasta water
  • black pepper

Why it happened

Over-reduction concentrates proteins and starch, making sauce tight. Warm liquid relaxes the emulsion.

The fix

Save
  1. 1 whisk in warm milk 1 tablespoon at a time
  2. 2 add a splash of pasta water to re-emulsify
  3. 3 finish with black pepper and a small pat of butter

If it's still wrong

  • Use as a spread in a baked pasta.
  • Thin further and serve as a soup base.

Prevent next time

  • Remove from heat once it coats a spoon.
  • Add cheese off heat and stir gently.
