Alfredo Too Thick
Your Alfredo sauce is gluey because it reduced too far or the cheese over-set. Loosen it with warm liquid.

Ingredients on hand
- thick alfredo sauce
- warm milk
- butter
- pasta water
- black pepper
Why it happened
Over-reduction concentrates proteins and starch, making sauce tight. Warm liquid relaxes the emulsion.
The fix
- 1 whisk in warm milk 1 tablespoon at a time
- 2 add a splash of pasta water to re-emulsify
- 3 finish with black pepper and a small pat of butter
If it's still wrong
- Use as a spread in a baked pasta.
- Thin further and serve as a soup base.
Prevent next time
- Remove from heat once it coats a spoon.
- Add cheese off heat and stir gently.
