Alfredo Too Thin

- alfredo sauce
- parmesan
- butter
- cream
- black pepper
Why it happened
Alfredo thickens through reduction and cheese emulsification. Extra reduction and cheese restore body.
The fix
- 1 simmer gently for 3 to 4 minutes to reduce
- 2 whisk in 2 tablespoons grated parmesan off heat
- 3 finish with a pat of butter and black pepper
If it's still wrong
- Add a teaspoon of cornstarch slurry and simmer 1 minute.
- Toss with pasta water to help it cling.
Prevent next time
- Use freshly grated parmesan for better melt.
- Keep heat low to avoid breaking.
