Alfredo Too Thin

Why it happened

Alfredo thickens through reduction and cheese emulsification. Extra reduction and cheese restore body.

The fix

Save
  1. 1 simmer gently for 3 to 4 minutes to reduce
  2. 2 whisk in 2 tablespoons grated parmesan off heat
  3. 3 finish with a pat of butter and black pepper

If it's still wrong

  • Add a teaspoon of cornstarch slurry and simmer 1 minute.
  • Toss with pasta water to help it cling.

Prevent next time

  • Use freshly grated parmesan for better melt.
  • Keep heat low to avoid breaking.
